Ingredients:
2 cups cooked brown rice (cooled and refrigerated)
1/2 cup sliced spring onions (green and white parts separated)
1/2 cup sliced mushrooms
1/2 cup chopped cluster beans
1/2 cup diced red bell peppers
1/2 cup diced yellow bell peppers
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vinegar
1/3rd cup of Gusto's Ready to Eat Schezwan Gravy
2 tablespoons cooking oil
Salt and pepper to taste
Instructions:
Prepare the Brown Rice: Make sure you have cooked brown rice that has been cooled and refrigerated for a few hours or overnight. Cold rice works best for fried rice as it prevents it from becoming too sticky.
Stir-Fry the Vegetables: Heat the cooking oil in a large pan or wok over medium-high heat. Add the minced garlic and sliced spring onion whites. Sauté for about a minute until fragrant.
Add the sliced mushrooms, chopped cluster beans, and diced red and yellow bell peppers to the pan. Stir-fry the vegetables for about 3-4 minutes or until they start to become tender but still crisp.
Make the Schezwan Sauce: In a small bowl, mix the soy sauce, honey, vinegar, and Gusto's Ready to Eat Schezwan Gravy. Combine well.
Combine Rice and Sauce: Push the stir-fried vegetables to one side of the pan and add the cold brown rice to the other side. Pour the Schezwan sauce over the rice. Stir the rice and sauce together, making sure the rice is evenly coated. Continue to cook for another 2-3 minutes, stirring occasionally.
Add Spring Onions: Stir in the sliced spring onion greens and continue to cook for another 1-2 minutes until the rice is heated through and the spring onions are wilted.
Season and Serve: Season the fried rice with salt and pepper to taste. Taste and adjust the seasoning if needed.
Serve Hot: Transfer the Schezwan Fried Rice to serving plates, garnish with extra spring onions if desired, and serve hot.
